Recipe for the farmer's bread in the oven master or the little magician “Lilly” or the round magician
Ingredients (only half for the magicians)
• 430 g of water
• 20 g of fresh yeast
• 30 g syrup (maple, sugar beet, dandelion)
• 500 g wheat flour 550
• 120 g wheat flour 1050
• 80 g rye flour 1150
• 15 g of oil
• 15 g of salt
• 1 1/2 tsp baking malt (homemade) or 1/2 tsp baking malt (bought)
preparation
1. Mix the water (lukewarm, approx. 37 degrees C.), yeast and syrup carefully
2. Add the remaining ingredients and knead for about 5 minutes.
3. Pour the dough into the lightly greased stainless steel bowl, dust with the Streufix with flour and let rise for 1 hour.
4. Put the dough on the lightly floured dough base, fold 10 times and shape into a loaf and place in the oven master or "Lilly"give. Dust with flour and cut into it with a sharp knife (diamond, across, heart).
5. Place in the cold oven with the lid on and bake for 60 minutes at 240 ° C (top / bottom heat).
6. Then remove the lid and bake for another 5-10 minutes until the desired brown color.
7. Take out of the oven master or "Lilly" and let cool down.
