Maika's quick yogurt rolls
ingredients
• 120 g of lukewarm water
• 150 g Greek yogurt
• 3 g of fresh yeast
• 75 g wheat flour 1050
• 350 g wheat flour 550
• 10 g of honey
• 1 teaspoon salt
• 1 teaspoon of baking malt
preparation
1. Mix the water, yoghurt, yeast and honey in the large metal bowl of Pampered Chef or in the TM6 at 37 degrees for 2 minutes.
2. Add the remaining ingredients and knead the dough well for at least 5 minutes.
3. Roll the dough along the long side of the dough base approx. 10 times without adding extra flour.
4. Then pinch 4 (large rolls) or 6 (medium rolls) from the ball of dough between your thumb and forefinger. Cover it with a damp tea towel and let it rise for an hour.
5. Preheat the Magic Stone Plus to 250 degrees top / bottom heat.
6. Then bake the rolls at 240 degrees top / bottom heat for 10 minutes and then again for 6 minutes at 220 degrees top / bottom heat.
8. Tip: The rolls taste best after they have cooled down on the wire rack for 5-10 minutes.
